A CAFE manager in Ware has been landed with a bill for nearly £1,000 because he failed to put together the necessary food hygiene procedures. East Herts Council took Ovgu Ahmet of The Lounge, in Amwell End, to court where he pleaded guilty. Magistrates fined him £200 and a £15 victim surcharge and ordered him to pay the council's full costs of £458.27 plus £250 legal costs - a total of £923.27.
Mr Ahmet had been told by a council environmental health officer on three separate occasions in 2008 that he needed to create a food safety management plan.
Hertford Magistrates Court heard that in April a further routine food hygiene inspection was carried out at The Lounge and it was found that Mr Ahmet still had no documented food safety management system.
Because he had consistently failed to comply with the food hygiene regulations, he was served with a Food Hygiene Improvement Notice. He eventually produced a food safety management system six days before the court case on Tuesday.
Cllr Malcolm Alexander, Executive member for community safety and protection, said: "The Lounge was given ample opportunity to comply and failed on four occasions. This case should serve as a warning to anyone else in similar circumstances that we will prosecute.
